Corn Flake Cookies

Last weekend my younger daughter had a volleyball tournament and all the parents brought some food for the girls to snack on during the day. Most of us brought boring stuff such as carrot sticks or protein bars, but my friend Jackie snuck in these amazingly yummy corn flake cookies, and needless to say, they were the hit of the day. (I think my husband even smuggled a few into his pockets to hoard them for the next day.) Coated with sugar, peanut butter and coconut, then covered with chocolate, these great cookies are completely delicious, and also completely addictive — don’t say I didn’t warn you….

Here is how to make them:

CORN FLAKE COOKIES (by Jackie Jensen)

1 cup light Karo syrup

1 cup sugar

Cook on medium, stirring constantly, until the sides begin to bubble a little (be careful not to burn).

Take off burner.

Add 1 cup creamy peanut butter.

Add 1 cup coconut.

Add 6 cups corn flakes and make sure they all get covered (this takes some elbow grease!).

Lay out WAX paper.

Immediately after, form into small balls (or whatever size you prefer), dipping your fingers in water so they don’t stick.

Use “Baker’s Dipping Chocolate” (or anything similar) and melt according to directions.

Add chocolate to the top or cover completely (whichever you prefer).

Let cool/harden and then you’re ready to indulge!

NOTE:  They are only good for a couple of days and then they start to get hard/chewy.
